SCOBY?
Symbiotic Culture of Bacteria and Yeast (Scoby) is a dense, round, rubbery, and opaque with a vinegar-like smell used in the making of our kombucha. The jellyfish-like structure of the Scoby is comprised mainly of insoluble fiber known as cellulose. It nestles a variety of yeast and bacteria species that aid Boomchaz Kombucha's fermentation process.
Scoby, in a nutshell, is the one who aids the fermentation process of kombucha. It is the queen of kombucha.
A healthy Scoby is important to make a good batch of kombucha tea.
